Omg I'm gonna barf. So much food. Super awesome place though. We got a sneak peek during their soft opening, and all we can say is...the hype is real. These pancakes are fluffier than your wildest dreams.

This is definitely going to be a place for IG and Xiaohongshu content as well. A new international F&B heavy-hitter has set up shop, and the unbelievable thing is that they already have people lining up all the way out in Pudong at EKA Tianwu, that really cool development of remastered industrial architectural chic.

The place is called Flipper's – the brunch spot that brought the world the fluffy, bouncy, cloud-like "Kiseki Soufflé Pancakes." Straight outta Shibuya, Tokyo, and after making pit stops in Seoul, Hong Kong, Taipei, New York and LA, they've finally landed here.

And one interesting point of interest, the owning group of Flippers is massive Japanese conglomerate Bay Crews. You know what else they own? City Super!

They haven't even opened yet... and it's the middle of the day... on a WEEK day!

So what is it?

It's a pancake brunch restaurant. Well, they do other things really well too, but the soufflé pancakes are what people are lining up to get – sometimes for hours – in Shibuya and Soho, New York. The meticulousness of their preparation is trademark Japanese. They use imported Hinata eggs and Hokkaido flour, whipped buttercream with AOP-certified French butter, and Japanese milk. The batter is prepared in small doses, and everything is made-to-order, with your pancakes taking no less than 20 minutes to float to your table. The visual effect is almost serenely unnerving. Like AI images of pancakes. Beyond gorgeous. Beyond possible.

And the taste? They say it's like biting into a chiffon cloud. They are not wrong. It's like biting into a dream. A promise. A memory.

(Well, yeah, we're laying it on a bit thick, but... yes, we're telling you, these are indeed some pretty damn marvelous pancakes. Light, fluffy, and just a pang of egg flavor, reminiscent of a tart. Four thousand calories of whipped buttercream and in-house secret recipe maple syrup certainly bring their own joys.)

An impossible color blankets a stack of two soufflé pancakes. These sandwich cream, cheese, strawberries, and house-made jam. Super simple, super fresh, but somehow super inscrutable.

These items are the must-tries. But if you're looking for more savory brunch options in addition to these desserts, we'd steer you towards a few red-white-and-blue American classics. Flipper's has some really good ones. The Chicken & Waffle.

Make sure you put that syrup on the fried chickennot the waffles. Crazy good.

And here we have the Flipper's Burger, towering with two patties, avocado, and jack cheese. Lighter than it looks, we're happy to report!

Other savory options include an Eggs Benny dish, sides like truffle fries, chicken tenders, and more. We recommend getting a savoy option, saving the pancakes for dessert, and spending some time in the restaurant. They've got some beautiful outdoor seating. Enjoy the two weeks it lasts with an alfresco brunch.

The Logistics

Flipper's is in EKA Tianwu, a huge galleries, restaurants, cafes, shops, and spas urban creative park expansion in Jinqiao, Pudong. It's… not close to downtown. By any means. But it's more interesting than that first sentence made sound, and so worth a trip to spend an afternoon in. There's galleries and theater spaces to check out, some interesting installations and architecture, a few places to get a drink, and then marvelous Japanese miracle pancakes to try out when you finally get a seat.

So, on to that. Getting a seat. Flipper's is "kind of a big deal right now," so it's packed on the weekend, with waits to get a table. During the week, it's easy to just roll in. They're soft-opening right now, so the hours are 11am to 5:30pm. From November 2, they're open fully, seven days a week, from 10am to 10pm. The last order is at 9:30pm.
